Scale
For the Salad:
- 3 cups watermelon, cubed or balled
- 1 1/2 cups cucumber, sliced, peeled, and seeds removed
- 2 tablespoons mint, thinly sliced or small mint leaves
- 1/3 cup feta cheese, crumbled
For the Dressing:
- 3 tablespoons olive oil
- 1 tablespoon lime juice
- Salt and pepper, to taste
Instructions
- Prepare the Salad: In a large bowl, combine watermelon, cucumber, and mint.
- Make the Dressing: In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
- Toss and Serve: Drizzle the dressing over the salad, toss to coat, sprinkle with feta, and serve.
Notes
- I recommend using a block of feta cheese for better flavor.
- If using a standard cucumber, peel and remove seeds; English or Persian cucumbers don’t need peeling or seeding.
