  • 2 tablespoons granulated sugar
  • 1 tablespoon vegetable oil
  • 1 egg white
  • 1/2 tablespoon baking powder
  • 1/2 tablespoon milk
  • 1/4 teaspoon pure vanilla extract

Instructions

  1. Mixing the Ingredients: In a large mug, mix together all the ingredients until smooth. Be sure not to over-mix, as this can affect the texture of the cake.
  2. Microwaving the Cake: Microwave the mug on high for 90 seconds, and up to two minutes, until the cake rises and appears cooked through (no longer looks raw on top). To check for doneness, insert a toothpick into the center — if only a few crumbs stick to it, the cake is done. If you see raw dough or significant batter, microwave for an additional 30 seconds.
  3. Adding Toppings: Once the mug cake is cooked, top it with your favorite toppings like icing, strawberries, whipped cream, or even vanilla ice cream.

  • Storage: Mug cake is best enjoyed fresh, ideally on the same day. If stored at room temperature in an airtight container, it will last up to two days, though the texture and flavor might not be as fluffy. Alternatively, store it covered in the fridge for 3 to 4 days.
