For Poaching the Chicken:
- 2 pounds boneless skinless chicken breasts
- Kosher salt

- 1 cup mayonnaise

- 1 cup red grapes, quartered
- 2 celery ribs, diced
- 3 green onions (green and white parts), sliced

Instructions
