- 1 large cucumber, unpeeled
- 2 cups plain full-fat Greek yogurt

Instructions
- Grate the cucumber: Using a box grater or food processor, grate the whole cucumber and transfer it to a cheesecloth (or a tea towel). Squeeze out as much liquid as possible to keep your sauce thick and creamy.
- Mix the ingredients: Combine the shredded and drained cucumber, Greek yogurt, minced garlic, extra virgin olive oil, lemon juice, fresh dill, and salt in a large bowl. Ensure everything is mixed evenly to create a smooth consistency.
- Chill the sauce: Cover the bowl and refrigerate overnight, or for at least 2 hours, to allow the flavors to meld together. Serve chilled with pita bread, vegetables, grilled meats, or gyros for the best taste. While you can serve it immediately, the flavors deepen with time.
Notes
- How to Store: Transfer the tzatziki dip to an airtight container and store in the refrigerator for up to 5 days.
- If separation occurs: You may notice some separation after a day or two in the refrigerator. If so, give the sauce a good stir to bring it back to an even consistency.
