Description

An easy and delicious Two-Person Raspberry Crumbles recipe, perfect for satisfying a sweet craving without leftovers. Made with fresh or frozen berries, a buttery crumble, and baked to golden perfection.

Berry Mixture:

      • 1 1/2 cups of fresh or frozen berries
      • 2 tablespoons sugar (adjust based on the tartness of your berries)
      • 1/2 tablespoon cornstarch
      • Squeeze of lemon juice

Crumble Layer:

    • 4 tablespoons butter, melted
    • 1/2 cup rolled oats
    • 1/2 cup flour
    • 1/4 cup brown sugar
    • 1/4 teaspoon baking powder
    • Pinch of salt

Instructions

  1. Prep: Preheat your oven to 350°F.
  2. Mix: Gently mix all the ingredients for the berry mixture in one bowl until combined. In a separate bowl, mix all the crumble layer ingredients until it comes together.
  3. Bake Part One: Take two 4-inch ramekins and press about two-thirds of the crumble mixture into the bottom of each. Bake the ramekins for about 5 minutes to set the crust. If you prefer a firmer crust, bake a bit longer.
  4. Bake Part Two: Remove the ramekins from the oven. Pour the berry mixture evenly over each crust. Sprinkle the remaining crumble evenly on top of each ramekin. Return to the oven and bake for another 7-10 minutes, or until the fruit filling is bubbling and the crumble topping turns golden brown.
  5. Live It Up: Allow the crumbles to cool for at least 10 minutes if possible. This helps to set the layers. If waiting isn’t an option, dive straight in with a fork and enjoy the juicy, buttery goodness!

Notes

  • You can use any combination of berries you like – try raspberries, blueberries, strawberries, or a mix!
  • Adjust the sugar in the berry mixture based on how tart or sweet your berries are naturally.
