- 4x 9-10"/23-25cm Flour Tortillas
- 240g / 1 cup Pizza Sauce (see notes)
- 200-250g / 2-2.5 cups shredded Mozzarella
- 1 large Pepper, thinly sliced
- 1 small White Onion, thinly sliced
- Handful of Black Olives, thinly sliced
- Handful of sliced Jalapeños
- 5-6 Pork Sausages, meat squeezed from skins
- 12 slices of Pepperoni
- Few pinches of Oregano
- Olive Oil, as needed
Instructions
- Cook the Sausage: Fry the sausage meat in a large pan with a dash of olive oil until golden brown, breaking it apart with a wooden spoon as it cooks. Once cooked, remove the sausage meat and set aside.
- Sauté Vegetables: In the same pan with leftover sausage fat, fry the sliced onion and pepper until softened. Remove and place them aside with the sausage meat.
- Prepare Tortillas: Stack the tortillas on a chopping board and make a single slice from the centre down to the bottom edge. Lay them out flat on a clean surface.
- Assemble Wraps: Spread pizza sauce on the bottom-right quarter of each tortilla. Add the sautéed vegetables on the quarter above, then the cooked sausage on the top-left quarter, and finish with shredded mozzarella on the remaining section.
- Fold the Tortillas: One by one, fold the bottom-right quarter (sauce) over the vegetables, then fold the sausage quarter over that, and finally fold over the mozzarella quarter. Press down gently to secure the filling inside the folded tortilla.
- Pan Fry Tortilla Wraps: Preheat a pan over medium heat and place the folded wraps inside. Fry each wrap for a few minutes until the bottom is golden and crisp, then carefully flip using a plastic spatula and fry the other side until it begins to crisp as well. Lower heat if they char too quickly.
- Add Toppings: Spread additional pizza sauce over the top of each wrap. Add shredded mozzarella, pepperoni slices, and a few pinches of oregano on top.
- Grill to Finish: Preheat the grill to HIGH. Place the wraps under the grill and cook until the pepperoni crisps up and the cheese melts thoroughly.
- Serve: Remove from the grill and serve hot. Enjoy the crispy, melty tortilla wrap pizzas as is or with sides like salad or fries.
