For the Teriyaki Ground Turkey:
- 1 Tbsp olive oil
- 3 garlic cloves, minced
- 1 1/2 cups chopped white onion
- 1 lb lean ground turkey
- 1 cup shredded carrots
- 2 cups broccoli florets, chopped small
- 1 cup frozen peas
- 1 1/2 cups teriyaki sauce
To Serve:
- 4 cups cooked rice (optional)
Instructions
- Cook the Rice: Prepare 1 ½ cups of rice according to package instructions using a rice cooker or on the stove.
- Prep the Vegetables: Shred carrots, chop onion, mince garlic, and chop broccoli into bite-size pieces.
- Cook the Turkey Mixture: Heat olive oil in a pan, sauté garlic and onion until translucent. Add ground turkey, breaking it apart and cook until no longer pink. Add broccoli, carrots, and peas. Cover and cook until vegetables are tender.
- Add Teriyaki Sauce: Pour teriyaki sauce over the turkey mixture and cook until heated through.
- Serve: Scoop cooked rice into bowls, top with the teriyaki ground turkey mixture, and enjoy!
