Description

A hearty and comforting Tater Tot Breakfast Casserole featuring layers of crispy tater tots, savory cooked sausage, fluffy eggs, and melted Mexican blend cheese. Perfect for a crowd or a filling family breakfast.

Ingredients

Scale

Sausage

  • 1 pound regular or hot breakfast sausage (cooked and crumbled)

Tater Tots and Cheese

  • 30 ounces frozen tater tots
  • 2 cups shredded Mexican blend cheese or cheddar cheese (divided)

Egg Mixture

  • 8 eggs
  • 1 cup milk
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon granulated garlic or garlic powder
  • ½ teaspoon onion powder

Instructions

  1. Preheat and Prepare: Preheat your oven to 350ºF. Grease a 9×13-inch baking dish with butter to prevent sticking and set aside.
  2. Cook Sausage: In a large skillet over medium-high heat, cook the breakfast sausage until browned and crumbly. Drain any excess grease if necessary.
  3. Assemble Base Layers: Place the frozen tater tots evenly in the prepared baking dish. Add the cooked sausage on top, then sprinkle 1½ cups of the shredded cheese evenly over the tater tots and sausage. Gently stir to combine these layers.
  4. Mix Egg Mixture: In a medium bowl, whisk together the eggs, milk, kosher salt, black pepper, granulated garlic, and onion powder until well combined.
  5. Combine and Top: Pour the egg mixture evenly over the tater tot and sausage mixture in the baking dish. Sprinkle the remaining ½ cup of cheese over the top of the casserole.
  6. Bake: Place the baking dish in the oven and bake for 55-60 minutes, or until the eggs are set and the top is golden brown around the edges.
  7. Serve: Remove from the oven and allow to cool slightly before serving warm. Enjoy this satisfying breakfast casserole!

Notes

  • This casserole is perfect for feeding a crowd or meal prepping for the week.
  • Use hot breakfast sausage for an extra spicy kick, or regular sausage for a milder flavor.
  • Feel free to swap Mexican blend cheese with cheddar or your favorite cheese.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
  • Adding chopped bell peppers or onions to the sausage layer can add extra flavor and nutrition.
