  • 1 lime, juiced

Vegetables

  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1 pint grape or cherry tomatoes, halved
  • 1 jalapeño pepper, minced (optional)
  • 3 cups shredded iceberg lettuce

Extras

  • 8 oz Habanero Cheddar cheese (or any cheddar cheese), cubed

Instructions

  1. Cook the Pasta
    Cook the spiral pasta according to the package’s directions until it reaches an al dente texture. Drain and transfer the cooked pasta to a large mixing bowl.
  2. Prepare the Beef
    In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess oil. Add the cooked beef into the mixing bowl with the pasta.
  3. Mix in Seasoning
    Stir the taco seasoning into the pasta and beef mixture, ensuring everything is evenly coated.
  4. Add Cheese, Veggies, and Beans
    Incorporate the cubed cheese, bell pepper, red onion, tomatoes, cilantro, black beans, lime juice, and optional jalapeño. Gently toss to combine all ingredients thoroughly.
  5. Toss with Dressing
