Description

This homemade Taco Bell-inspired Enchirito recipe combines seasoned ground beef, refried beans, and tangy hot sauce wrapped in a soft tortilla then topped with melty cheese. Perfect for a quick and satisfying meal for your family!

Ingredients

Units Scale

Main Ingredients

    • 1 pound ground beef
    • 1/4 cup finely diced onion
    • 2 tablespoons taco seasoning
    • 1/4 cup beef broth, or water
    • 1 (16 oz) can refried beans
    • 4 burrito-sized flour tortillas

Toppings

  • 1 cup Taco Bell hot sauce, or red enchilada sauce
  • 1 cup shredded cheddar cheese

Instructions

  1. Cook the beef mixture: In a medium-sized skillet over medium-high heat, cook the ground beef, diced onions, taco seasoning, and beef broth together. Break apart the meat as it cooks until it is no longer pink. Once cooked, set it aside.
  2. Heat the refried beans: Warm the refried beans either in the microwave or on the stovetop until they are hot.
  3. Prepare the tortillas: Wrap the flour tortillas in a damp paper towel and microwave them for 30 seconds to make them soft and pliable.
  4. Assemble the burritos: Spread 1/4 of the hot refried beans down the center of a tortilla. Then, top with 1/4 of the beef mixture. Fold in the sides of the tortilla, and starting at one side, roll the tortilla into a burrito shape. Repeat for the remaining tortillas.
  5. Microwave option: Place the burritos on a microwave-safe plate and microwave them for 1 minute to ensure they’re hot. Top each burrito with Taco Bell hot sauce and shredded cheese. Optionally, microwave for 1 more minute to melt the cheese on top.
  6. Oven option: Preheat the oven to 425°F. Place the assembled burritos in an oven-safe dish and top each one with hot sauce and shredded cheese. Bake for 7 minutes, or until the cheese is fully melted. Alternatively, broil for about 30 seconds for a quick melt.

Notes

  • Ground Beef Options: Feel free to substitute ground beef with ground turkey or chicken. For a spicy variation, use spicy taco meat.
  • Toppings: Add sour cream, cilantro, guacamole, sliced avocados, or enchilada sauce for extra flavor.
  • Leftovers: To avoid sogginess, store the prepared ingredients separately and assemble fresh when ready to eat. Alternatively, store burritos without the sauce on top.
  • Fridge Storage: Store the prepared burrito (without sauce or cheese) in an airtight container or wrapped in foil for up to 3 days. Reheat in the microwave until warm throughout.
  • Freezer Storage: Wrap burritos (without sauce or cheese) tightly in foil or a zip-top bag and freeze for up to 3 months. Defrost in the fridge overnight and reheat in the microwave until warm throughout.
