Sweet Potatoes

  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon freshly ground black pepper

Beef

  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • 1/4 cup water, or as indicated on the seasoning packet

Seasoned Cottage Cheese

  • 1 1/2 to 2 cups cottage cheese
  • 1/2 to 1 teaspoon garlic powder
  • 1/4 teaspoon salt, optional and to taste
  • 1/4 teaspoon black pepper, optional and to taste
  • 2 tablespoons fresh parsley, chopped

Toppings

  • Avocado, diced or sliced
  • Jalapeños, sliced
  • Hot honey
  • Red pepper flakes

Instructions

  1. Sweet Potatoes – Preheat oven to 425F. Toss sweet potato cubes with olive oil, chili powder, cumin, salt, and pepper. Roast for 20-25 minutes.
  2. Ground Beef – Brown beef in a skillet, add taco seasoning and water, simmer until thickened.
  3. Seasoned Cottage Cheese – Mix cottage cheese with garlic powder, salt, pepper, and parsley.
  4. Garnish – Top bowls with avocado, jalapeños, hot honey, and red pepper flakes.

Notes

  • An avocado adds about 250-300 calories and 22g fat per serving. Without it, the bowl is about 350 calories and 13g fat with 31g protein.
  • Homemade taco seasoning can be made with chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and pepper.
