  • 1 1/2 teaspoons coconut oil (optional, divided: 1 teaspoon for coating, 1/2 teaspoon for drizzle)


Instructions

  1. Melt White Chocolate: Melt 1/2 cup of white chocolate chips according to package instructions, either in a microwave at 30-second intervals or a double boiler until smooth.
  2. Prepare Truffle Mixture: In a food processor, combine the strawberries, cream cheese, melted white chocolate, and powdered sugar. Pulse until the mixture is smooth and creamy. Transfer it to a freezer-proof bowl, cover, and freeze for 2 hours to firm up.
  3. Form Truffle Balls: Using a small cookie scoop, portion the chilled mixture into 16 balls onto a wax paper–lined cookie sheet. Freeze again for 1 hour to solidify.
  4. Shape Truffles: Roll each frozen scoop into smooth inch-sized balls using your hands. Place them back on the wax paper–lined baking sheet and freeze for an additional hour.
  5. Melt Chocolate Coating: In a microwave-safe bowl, combine the chocolate chips and 1 teaspoon of coconut oil (optional). Microwave at 50% power for 1 minute, stir, then continue heating in 30-second increments at 50% power until fully melted and smooth.
  6. Dip Truffles: Carefully dip each frozen truffle into the melted chocolate, ensuring even coating. Place dipped truffles back on the wax paper–lined sheet and freeze for 10 minutes to set the chocolate.
  7. Drizzle White Chocolate: Melt the remaining white chocolate chips and, if desired, 1/2 teaspoon coconut oil in the microwave, heating at 50% power in 30-second intervals until smooth. Drizzle the melted white chocolate over the chocolate-coated truffles for a decorative finish.
  8. Chill and Serve: Refrigerate the finished truffles until ready to serve, allowing the flavors to meld and coating to firm up.
