Ingredients
Scale
For the Chicken and Sauce
- 1 tsp sesame oil
- 600g chicken thighs, diced
- 150g pineapple pieces
- 100ml pineapple juice
- 3 Tbsp low salt soy sauce
- 2 Tbsp sweet chilli sauce
- 1 tsp crushed ginger
- 1 tsp crushed garlic
- 1 Tbsp cornflour
For Serving
- 2 cups white rice, cooked
- 1 cup edamame beans, cooked
- 2 radishes, finely sliced
- 1 avocado, sliced
- 1 spring onion, finely sliced
- 1 tsp sesame seeds
Instructions
- Heat the oil and cook chicken: Heat sesame oil in a nonstick frying pan over medium heat. Add the diced chicken thighs and cook, stirring regularly, for about 5 minutes until the chicken is browned on all sides.
- Add pineapple and brown: Drain the pineapple pieces, reserving the juice. Add the pineapple pieces to the pan with the chicken and cook for an additional 3 minutes, allowing the pineapple to brown slightly and enhance flavor.
- Prepare and add sauce: In a separate bowl, whisk together pineapple juice, low salt soy sauce, sweet chilli sauce, crushed ginger, crushed garlic, and cornflour until smooth. Make a gap in the center of the frying pan and pour the sauce in.
- Cook sauce and finish chicken: Stir the sauce continuously with the chicken and pineapple, cooking until the sauce thickens and the chicken is fully cooked through.
- Assemble the dish: Start with a serving of hot cooked white rice. Top with the sticky chicken and pineapple mixture. Add cooked edamame beans, sliced radishes, avocado slices, spring onion, and sprinkle sesame seeds over the top for garnish.
Notes
- This dish offers a beautiful balance of sweet, sour, and savory flavors with fresh and cooked vegetable accompaniments.
- Using low salt soy sauce helps reduce sodium content without sacrificing umami flavor.
- The cornflour helps thicken the sauce to a luscious glaze that clings to the chicken and pineapple perfectly.
- For a healthier alternative, you can swap white rice for brown rice or cauliflower rice.
- Ensure chicken is cooked through to an internal temperature of 75°C (165°F) for safe consumption.
