- 15 oz part skim ricotta cheese (such as Polly-O)
- 1/2 cup grated Parmesan cheese
- 1 large egg
- Kosher salt and fresh pepper, to taste
Topping
- 9 tbsp (about 3 oz) part skim mozzarella cheese, shredded
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Prepare a 9 x 12-inch baking dish by ladling about 1 cup of marinara sauce evenly on the bottom to prevent sticking and add flavor.
- Cook Noodles: Cook the lasagna noodles according to the package instructions until al dente. Drain the noodles well and lay them flat on a clean surface or wax paper to cool slightly and prevent sticking.
- Prepare Filling: In a medium bowl, combine the thawed and well-drained spinach with ricotta cheese, grated Parmesan, the large egg, 1/2 teaspoon kosher salt, and freshly ground black pepper. Mix thoroughly until all ingredients are well incorporated.
- Assemble Roll Ups: Place the dry noodles on wax paper. Spread approximately 1/3 cup of the ricotta and spinach mixture evenly over each noodle. Carefully roll each noodle up, starting from one end, and place seam side down into the prepared baking dish.
- Add Sauce and Cheese: Spoon the remaining marinara sauce evenly over the assembled roll ups. Sprinkle 1 tablespoon of shredded mozzarella cheese on top of each roll to add a melty finish.
