Description

Delicious and easy-to-make Spinach Lasagna Roll Ups featuring tender noodles filled with a creamy spinach and ricotta mixture, baked in homemade marinara sauce and topped with melted mozzarella cheese. Perfect for a weeknight family meal or entertaining guests.

Ingredients

Scale

Marinara Sauce

  • 2 cups homemade marinara sauce (plus more for serving)

Lasagna

  • 9 uncooked lasagna noodles (wheat or gluten-free)

Filling

  • 10 oz package frozen chopped spinach (thawed and squeezed well)
  • 15 oz part skim ricotta cheese (such as Polly-O)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • Kosher salt and fresh pepper, to taste

Topping

  • 9 tbsp (about 3 oz) part skim mozzarella cheese, shredded

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Prepare a 9 x 12-inch baking dish by ladling about 1 cup of marinara sauce evenly on the bottom to prevent sticking and add flavor.
  2. Cook Noodles: Cook the lasagna noodles according to the package instructions until al dente. Drain the noodles well and lay them flat on a clean surface or wax paper to cool slightly and prevent sticking.
  3. Prepare Filling: In a medium bowl, combine the thawed and well-drained spinach with ricotta cheese, grated Parmesan, the large egg, 1/2 teaspoon kosher salt, and freshly ground black pepper. Mix thoroughly until all ingredients are well incorporated.
  4. Assemble Roll Ups: Place the dry noodles on wax paper. Spread approximately 1/3 cup of the ricotta and spinach mixture evenly over each noodle. Carefully roll each noodle up, starting from one end, and place seam side down into the prepared baking dish.
  5. Add Sauce and Cheese: Spoon the remaining marinara sauce evenly over the assembled roll ups. Sprinkle 1 tablespoon of shredded mozzarella cheese on top of each roll to add a melty finish.
  6. Bake: Cover the baking dish with foil and bake in the preheated oven for 40 minutes, or until the cheese has melted and the rolls are heated through.
  7. Serve: To serve, ladle a little extra marinara sauce onto the plate, place a lasagna roll on top, and enjoy your comforting and cheesy spinach lasagna roll ups.

  • Leftovers store well in the refrigerator and can be reheated covered at 350°F until warmed through.
