Description

Antojitos are a spicy, cheesy, and creamy appetizer featuring a delicious blend of cream cheese, cheddar, jalapeños, and bell peppers wrapped in whole wheat tortillas, baked until golden and gooey. Perfect for a quick snack or party treat, these bite-sized rolled tortillas burst with flavor and a touch of heat.

Ingredients

Scale

Cheese Mixture

  • 8 ounces cream cheese (at room temperature)
  • ¼ cup breadcrumbs
  • ¼ cup hot sauce

Vegetables

  • ½ red bell pepper (chopped)
  • ½ green bell pepper (chopped)
  • 1 jalapeno pepper (chopped)

Other

  • 3 large tortillas (ancient grain whole wheat recommended)
  • 1 cup cheddar cheese (shredded)

Instructions

  1. Preheat and Prepare: Preheat your oven to 350℉ (175℃) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Mix Cheese Filling: In a medium bowl, combine the cream cheese, breadcrumbs, and hot sauce. Use a fork to mix until the cream cheese softens and the ingredients are well incorporated. Add the chopped red bell pepper, green bell pepper, and jalapeno. Stir until all peppers are evenly distributed in the cream cheese blend.
  3. Assemble Rolls: Lay out each tortilla flat and spread approximately one-third of the cream cheese mixture evenly over each tortilla. Sprinkle one-third of the shredded cheddar cheese on top of the cream cheese layer on each tortilla.
  4. Roll and Slice: Carefully roll up each tortilla tightly, then slice each roll into 1-inch pieces to create bite-sized roulades.
  5. Arrange and Bake: Place the sliced tortilla rolls cut-side down on the prepared baking sheet, evenly spaced. Bake in the preheated oven at 350℉ for 10 minutes to melt the cheese and warm through.
  6. Broil for Finish: After baking, switch the oven to broil and cook the rolls under the broiler for an additional 3 minutes to achieve a lightly browned top and crispy edges. Watch closely to avoid burning.
  7. Serve: Remove from the oven and serve warm with your choice of salsa or sour cream for dipping.

Notes

  • Spicy, cheesy, and creamy, these Antojitos make a perfect appetizer or snack packed with flavorful peppers and melted cheese.
  • If you prefer less heat, reduce the amount of jalapeno or remove the seeds before mixing.
  • Using whole wheat or ancient grain tortillas adds a nutty flavor and extra nutrients.
  • These can be prepared ahead and baked just before serving for convenience.
  • Serve with fresh salsa, guacamole, or sour cream for complementary flavors.
