Description

This Easy Snowman Cheeseball is a delightful and festive appetizer perfect for winter celebrations. Combining sharp white cheddar with creamy cream cheese, garlic, and fresh herbs, this no-bake cheeseball is shaped like a snowman for a fun presentation. It’s simple to prepare, keto-friendly, and sure to be a crowd-pleaser at any holiday gathering.

Ingredients

Scale

Cheese Mixture

  • 8 ounces Cabot Seriously Sharp White Cheddar (divided)
  • 8 ounces cream cheese, softened
  • ¼ cup butter, softened
  • 4 cloves garlic, minced
  • 2 tbsp fresh chopped parsley
  • 1 tsp onion powder
  • ¾ tsp kosher salt
  • ½ tsp cracked black pepper

Decorations

  • 10 whole peppercorns
  • 1 thin baby carrot
  • 2 rosemary sprigs

Instructions

  1. Grate the Cheddar: Grate the cheddar cheese using the small holes of a box grater or a food processor fitted with a grating blade to get fine shreds.
  2. Mix the Base: In a large bowl, beat together the softened cream cheese and butter until smooth and well combined. Add half of the grated cheddar, minced garlic, chopped parsley, onion powder, kosher salt, and cracked black pepper. Continue beating the mixture until all ingredients are thoroughly incorporated.
  3. Form the Snowman Balls: Divide the cheese mixture into two uneven portions—about two-thirds for the body and one-third for the head. Lightly grease your hands with olive or avocado oil and roll each portion into smooth balls. Wrap each ball tightly in plastic wrap and refrigerate for 2 hours to firm up.
  4. Coat the Cheeseballs: Once chilled, unwrap the two balls and roll them in the remaining grated cheddar cheese, evenly coating the surfaces.
  5. Assemble the Snowman: Place the larger ball on a serving platter. Press two toothpicks halfway into the top of the large ball. Position the smaller ball on top, securing it in place with the toothpicks to form the snowman shape.
  6. Add Facial Features and Buttons: Use the whole peppercorns to create the eyes and mouth on the snowman’s head, as well as buttons down the body.
  7. Create the Nose and Arms: Cut the tip off the thin baby carrot and insert it into the snowman’s face as the nose. Remove most of the rosemary leaves from the sprigs and press the sprigs into the sides of the larger ball to serve as the snowman’s arms.
  8. Final Touches and Serving: Spread any leftover grated cheddar around the base of the snowman to resemble snow. Serve the cheeseball at room temperature for the best texture and easy scooping.
