Description

For the Salad:

  • 4-6 Persian cucumbers, sliced in half lengthwise
  • 4 cups cubed watermelon
  • 1-2 avocados, diced
  • 1/3 cup salted pistachios, chopped

For the Feta Dressing:

  • 8 oz feta cheese
  • 1/4 cup extra virgin olive oil
  • 2 tbsp lemon juice
  • 2 tsp honey
  • 1/2 cup fresh basil
  • 1 tbsp chopped fresh dill
  • kosher salt and black pepper, to taste
  • chili flakes, to taste

Instructions

  1. Smash the Cucumbers: Arrange the cucumbers on a cutting board, flesh side facing up. Use the flat side of a chef’s knife to smash the cucumbers, then chop them into 1-inch pieces.
  2. Prepare the Salad: In a salad bowl, combine the smashed cucumbers, watermelon, avocado, pistachios, and basil leaves.
  3. Make the Feta Dressing: In a separate bowl, crumble the feta cheese and mix in olive oil, lemon juice, honey, dill, salt, pepper, and chili flakes.
  4. Toss and Serve: Gently toss the salad with the feta dressing. Serve with pita and chips.
