Description

A rich and hearty Slow Cooker Bolognese Sauce made with lean ground beef, savory bacon, fresh vegetables, and fragrant herbs, simmered low and slow to develop deep, comforting flavors perfect for serving over pasta.

Meat

  • 3 strips of bacon or 50g pancetta, chopped (optional)
  • 1 lb extra-lean ground beef

Vegetables

  • 1 large onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced

Tomatoes & Sauces

  • 400g (14 oz) canned chopped tomatoes
  • 500ml (2 cups) tomato passata or crushed tomatoes

Herbs & Seasonings

  • 2 tsp dried basil
  • 2 tsp dried oregano
  • 2 tsp salt, divided
  • Salt and pepper, to taste


Instructions

  1. Cook bacon: In a frying pan, cook chopped pancetta or bacon over medium heat until crispy. Remove from pan and set aside on a plate.
  2. Brown ground beef: In the same frying pan, add ground beef seasoned with salt and pepper. Cook over medium heat, stirring and breaking up the meat, until fully browned and no longer pink.
  3. Combine ingredients in slow cooker: Add the diced onion, carrots, celery, minced garlic, cooked bacon, canned chopped tomatoes, tomato passata, dried basil, dried oregano, 1 tsp of salt, and the browned ground beef into the slow cooker. Stir everything together to combine well.
  4. Slow cook the sauce: Cover and cook on low for 8 hours to allow the flavors to meld and sauce to thicken beautifully.
  5. Final seasoning and serve: After cooking, taste the sauce and adjust salt as needed. Serve the bolognese sauce hot over cooked pasta and top with freshly grated parmesan cheese if desired.
