Description

A hearty and comforting Slow Cooker Beef Stew with rich gravy, packed with tender beef cubes, carrots, swede, and infused with the deep flavors of beer and Worcestershire sauce, perfect for a family meal.

Ingredients

Scale

Beef and Coating

  • 1 kg Beef cubes
  • 3 tbsp Plain flour

Vegetables and Aromatics

  • 1 Onion, chopped
  • 3 Garlic cloves, minced
  • 3 Carrots, peeled and chopped
  • 1/2 Swede (Rutabaga), peeled and chopped

Liquids and Seasonings

  • 2 Beef stock cubes (no need to dissolve)
  • 600 ml Beer
  • 3 tbsp Tomato puree
  • 3 tbsp Worcestershire sauce
  • 3 tbsp Sunflower oil
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Coat the Beef: Thoroughly coat the beef cubes in plain flour until evenly covered to help thicken the stew and create a delicious crust when browned.
  2. Brown the Beef: Heat sunflower oil in a pan or slow cooker insert suitable for stovetop. In batches to avoid overcrowding, brown the floured beef cubes until golden on all sides, developing deep flavor.
  3. Add Ingredients: Add the chopped onion, minced garlic, peeled and chopped carrots and swede, beef stock cubes, beer, tomato puree, Worcestershire sauce, salt, and pepper into the pan with browned beef. Stir gently to combine all ingredients.
  4. Slow Cook: Cover with a lid and cook in the slow cooker on HIGH for 5-6 hours or on LOW for 8-9 hours. The long cooking time will tenderize the beef and meld the flavors into a rich, hearty stew. Avoid opening the lid frequently.

Notes

  • This stew is a classic comfort food, perfect for family dinners and meal prepping.
  • Swede can be substituted with rutabaga if preferred.
  • You can brown the beef directly in the slow cooker insert if it’s stovetop safe, simplifying cleanup.
  • Do not worry about precise timing; the slow cooker is forgiving and prevents overcooking.
