Description

Beans and Tomatoes

  • 15 oz can black beans, drained and rinsed
  • 30 oz kidney beans (two 15 oz cans), drained and rinsed
  • 30 oz diced tomatoes with their juice
  • 10 oz diced tomatoes and green chilis with their juice
  • 30 oz tomato sauce


Instructions

  1. Sauté Beef: Place a large skillet over medium-high heat and add the ground beef. Cook for 4-5 minutes, breaking it up with a spatula, until the beef releases its fat.
  2. Add Onion and Garlic: Add the diced onion to the skillet and sauté until tender, about 4-5 minutes. Then add the minced garlic along with the cumin powder, chili powder, garlic powder, dried oregano, salt, and black pepper. Stir constantly and cook for another 30 seconds to toast the spices.
  3. Transfer to Slow Cooker: Transfer the cooked beef, onions, garlic, and seasonings mixture to a 6-quart slow cooker.
  4. Add Remaining Ingredients: Add the drained and rinsed black beans and kidney beans, diced tomatoes with their juice, diced tomatoes and green chilis with their juice, and tomato sauce to the slow cooker. Stir everything to combine well.
  5. Cook the Chili: Cover and cook the chili on high for 3-4 hours or on low for 6-8 hours, allowing flavors to meld and beef to become tender.
  6. Season and Serve: Taste the chili and adjust seasoning as desired. Serve warm with your favorite toppings or sides.
