- 1/2 a lemon, juiced
- 1 Tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven: Preheat the oven to 400°F (205°C).
- Prepare the carrots: Peel and chop the carrots into 1.5 to 2-inch pieces.
- Make the honey glaze: In a large baking dish, combine olive oil, honey, garlic, thyme, salt, and pepper. Toss the carrots in the mixture.
