Description

Shrimp and Grits Bites are a delicious bite-sized version of the classic Southern comfort dish, perfect for parties and entertaining. Grits Base

  • 2 1/4 cups cooked grits
  • 2 tablespoons butter

Shrimp Topping

  • 36 medium shrimp (peeled and deveined)
  • 1/2 teaspoon Stone House Seasoning

  • 1/4 cup chopped fresh parsley


Instructions

  1. Preheat and Bake Grits: Preheat your oven to 350ºF. Lightly grease a mini muffin tin with non-stick cooking spray. Spoon the prepared cooked grits evenly into each muffin cup. Bake for about 30 minutes or until the tops are golden brown. Once baked, remove the tin from the oven and use the back of a spoon to gently press a small indention into the center of each grits cup. Allow them to cool in the pan for approximately 5 minutes. Then, carefully transfer the grits bites to a serving platter.
  2. Cook Shrimp: While the grits are baking, melt the butter in a medium skillet over medium heat. Add the Stone House Seasoning and chili powder if you choose to use it, stirring well to combine flavors with the butter. Add the peeled and deveined shrimp to the skillet. Cook the shrimp on one side until they turn pink and opaque, about 2 to 3 minutes. Flip the shrimp over and continue cooking for an additional 3 minutes or until they are cooked through and pink on both sides.
  3. Assemble Bites: Place one cooked shrimp on top of each baked grits bite. Drizzle a little of the melted seasoned butter from the skillet over each bite to add extra flavor and moisture. Finally, sprinkle chopped fresh parsley over the top as garnish to add color and freshness before serving.
