Description
Sausage Peppers and Onions is a classic Italian-American skillet dish featuring juicy Italian sausage links cooked with sweet bell peppers, onions, and aromatic garlic and herbs. Served on hoagie rolls, it makes a perfect hearty, flavorful meal that’s quick and easy to prepare, ideal for busy weeknights or casual gatherings.
Ingredients
Scale
Sausage
- 1 pound Italian sausage links
Vegetables & Seasoning
- 3 medium bell peppers, sliced (use different colors for variety)
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
Others
- 2 tablespoons olive oil
- 4 hoagie rolls, split lengthwise
Instructions
- Brown the Sausages: In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the sausages and brown them on all sides, about 5 minutes. Remove the sausages from the skillet. You can slice them into bite-sized pieces or leave them whole depending on preference.
- Sauté the Vegetables: In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced bell peppers and onions, cooking for about 5 minutes until they begin to soften.
- Add Garlic and Herbs: Stir in the minced garlic, dried oregano, dried basil, salt, and pepper. Cook with the vegetables for about 1 minute until fragrant, stirring frequently to avoid burning.
- Combine and Finish Cooking: Return the sausages to the skillet with the peppers and onions. Cook together for another 10 minutes, stirring occasionally, until the sausages are cooked through and the vegetables are tender and flavorful.
- Prepare the Rolls and Serve: If desired, lightly toast the hoagie rolls in the oven or on a separate skillet for a crispy texture. Open each roll, optionally spread your favorite sauce as a base, then fill generously with the sausage, peppers, and onions mixture. Serve warm.
