Description

Sausage and Vegetables

  • 1 pound smoked sausage, sliced
  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 3 medium bell peppers (any colors), sliced
  • 2 cloves garlic, minced
  • Salt & pepper, to taste

Instructions

  1. Brown the Sausage: Heat olive oil in a skillet over medium-high heat. Add the sliced smoked sausage and sear until browned and crispy on all sides, about 8-10 minutes. Remove sausage and set aside on a plate.
  2. Sauté Onions: In the same skillet, add onions and sauté for 2-3 minutes. Add more oil if the pan looks dry to prevent sticking and burning.
  3. Cook Bell Peppers: Add the sliced bell peppers to the skillet with the onions. Continue cooking until the peppers are tender-crisp and slightly charred to enhance flavor.
  4. Add Garlic: Stir in the minced garlic and cook for about one minute, just until fragrant.
  5. Combine and Season: Return the browned sausage to the skillet and mix well with the vegetables. Season with salt and pepper to taste. Cook together for an additional minute to blend flavors before serving.

Notes

  • Any smoked sausage works well; kielbasa or andouille are good alternatives. Use pre-cooked sausage for quicker preparation, but raw sausages will require longer cooking and possibly draining excess fat.
