For the salmon:
- 20 ounce salmon filet
- Olive oil
- 1 Tablespoon smoked paprika
- 1 1/2 teaspoons Kosher salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 teaspoon garlic powder
- 3 Tablespoons honey
- 2 Tablespoons apple cider vinegar
For the mango salsa:
- 2 large ripe mangoes (chopped or substitute 2 cups frozen mango)
- 1/2 small red onion (diced)
- 1/2 sweet bell pepper (chopped)
- 1 jalapeno (seeded if you don’t want a lot of heat, diced)
- Squeeze of lime
- Lots of fresh chopped cilantro
- Salt and pepper to taste
Instructions
- Preheat the grill: Preheat a grill to high heat (about 500-550 degrees). Brush a large piece of foil with olive oil.
- Season the salmon: Mix spices and rub on both sides of the salmon. Whisk together honey and apple cider vinegar, then pour over salmon.
- Grill the salmon: Wrap salmon in foil and grill for 9 minutes. Open the foil packet, continue grilling for 2-4 minutes until done.
- Make the mango salsa: Combine all salsa ingredients in a bowl and season to taste.
- Serve: Divide salmon into portions and top with mango salsa.
Notes
- To bake: Preheat oven to 450°F. Bake salmon covered for 10 minutes, then uncover and bake an additional 2-4 minutes until done.
