For the Whipped Ricotta

  • 1 cup whole milk ricotta cheese
  • 1 tbsp olive oil
  • 12 tbsp heavy cream or milk
  • generous pinch salt + pepper

For The Toasts

  • 4 slices good-quality sourdough bread
  • 46 large figs
  • honey
  • fresh basil
  • flaky sea salt

Instructions

  1. Make the Whipped Ricotta: Add the ricotta, olive oil, milk or heavy cream, and a generous pinch of salt and pepper to a small bowl. Whisk for a minute or two, until the ricotta becomes light and whipped.
  2. Assemble the Toasts: Toast your bread in the toaster or in a skillet on medium heat, or on a baking sheet in the oven. Spread on the whipped ricotta, then add your toppings. Slice figs vertically into 2-3 slices each. Add them to the ricotta, then add fresh basil leaves, a drizzle of honey, and a sprinkle of flaky sea salt to each piece of toast.
  3. Serve + Store: Enjoy immediately! Best when freshly made. Whipped ricotta can be stored in an airtight container in the fridge for up to a week.
