Ingredients

Jam Filling:

  • 2 1/4 cups frozen strawberries, chopped
  • 3 tbsp granulated sugar
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch
  • 2 tbsp cold water

Chocolate Cups:

  • 16 oz vegan semi-sweet or dark chocolate, chopped
  • 2 tbsp coconut oil

Peanut Butter Filling:

  • 2/3 cup natural peanut butter, stirred before measuring
  • 2 tbsp vegan butter, softened
  • 1/3 cup sifted confectioners’ sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Garnish, Optional:

  • 2 tbsp crushed freeze-dried strawberries

Instructions

  1. Jam Filling: In a small pot, cook strawberries until juicy. Add sugar and lemon juice. Mix cornstarch with water, then add to the berries. Cook until thickened. Cool and refrigerate.
  2. Chocolate Cups: Melt chocolate and coconut oil. Line muffin tin with liners, fill with melted chocolate, chill until hardened.
  3. Peanut Butter Filling: Mix peanut butter, vegan butter, sugar, vanilla, and salt until thickened. Form into balls.
  4. To Assemble: Place peanut butter puck in each cup, top with jam, cover with more chocolate. Freeze to set.
  5. Serve chilled or at room temperature. Store in airtight container.

Notes

  • Use fresh berries if needed.
  • If short on time, use store-bought jam.
  • Processed peanut butter can be substituted, adjust sweetness and saltiness accordingly.
