Description

These refreshing Peach Rosé Popsicles combine ripe summer peaches and light rosé wine for an easy, elegant frozen treat. With a pure peach base and a refreshing hint of citrus, they make the perfect adult dessert for summer parties or a cool afternoon indulgence.

For the Popsicles

  • 4 medium peaches (about 1 1/4 pounds), pitted and coarsely chopped (about 4 cups chopped)
  • 1 tablespoon lemon juice
  • 2 tablespoons granulated sugar
  • 1 cup rosé wine

For Garnish (Optional)

  • 1 medium peach, pitted and sliced

Instructions

  1. Prepare the Peach Puree: In a blender, combine the chopped peaches, lemon juice, and granulated sugar. Pulse until the mixture is completely smooth and there are no large chunks left. You should have about 2 1/2 to 2 3/4 cups of peach puree.
  2. Add the Rosé: Pour the rosé wine into the blender with the peach puree. Blend again until fully combined and smooth.
  3. Pour into Molds: Pour the blended mixture into popsicle molds, leaving approximately 1/2-inch of space at the top of each mold to allow for expansion as the popsicles freeze.
  4. Partial Freeze: Place the mold in the freezer and freeze for 1 hour. Set a timer; the mixture should thicken and become slightly slushy but not completely frozen.
  5. Add Peach Slices and Sticks: After 1 hour, if desired, place a peach slice or two into each pop, positioning them against the side and towards the bottom. Insert popsicle sticks at this stage—the mixture should be thick enough so the sticks stand up on their own.
  6. Freeze Overnight: Return the molds to the freezer and let freeze until completely solid, preferably overnight or for at least 6–8 hours.
  7. Unmold and Store: To remove the popsicles, run the molds under warm water briefly until the pops slide out easily. Arrange on a parchment-lined baking sheet, or wrap each pop individually in parchment or waxed paper and store in a zip-top freezer bag to prevent frost.

Notes

  • For a non-alcoholic version, substitute a sparkling juice or lemonade for the rosé.
  • Use ripe, fragrant peaches for maximum flavor.
  • If your peaches are very sweet, consider reducing the sugar slightly.
  • Popsicles can be stored in the freezer for up to 2 weeks for best flavor and texture.
  • Insert sticks after 1 hour of freezing to keep them centered.
