Description

These vibrant Peach Rosé Popsicles combine juicy peaches and a splash of rosé wine for a deliciously refreshing adult frozen treat. They’re easy to make, bursting with fresh fruit flavor, and perfect for hot summer days or entertaining guests.

For the Peach Puree

  • 4 medium peaches (about 1 1/4 pounds), pitted and coarsely chopped (about 4 cups chopped)
  • 1 tablespoon lemon juice
  • 2 tablespoons granulated sugar

For the Popsicles

  • 1 cup rosé wine
  • 1 medium peach, pitted and sliced, for garnish (optional)

Instructions

  1. Prepare the Peach Puree: In a blender, combine the chopped peaches, lemon juice, and sugar. Pulse until the mixture is completely smooth and no large chunks remain. You should get about 2 1/2 to 2 3/4 cups of peach puree.
  2. Add the Rosé: Pour 1 cup of rosé wine into the peach puree in the blender. Blend again until thoroughly combined and smooth.
  3. Fill the Molds: Carefully pour the peach and rosé mixture into your popsicle molds, leaving about 1/2-inch of space at the top to allow for expansion as they freeze.
  4. Initial Freezing: Place the molds in the freezer and freeze for 1 hour. Set a timer so you don’t forget this step.
  5. Insert Peach Slices and Sticks: After 1 hour, the mixture should be thickened and slushy but not solid. Push a slice or two of fresh peach down into each mold against the side, if desired. Insert popsicle sticks; the mixture should be thick enough that the sticks will stand upright.
  6. Freeze Until Solid: Return the molds to the freezer and freeze overnight, or until the popsicles are completely solid.
  7. Unmold and Store: To release the popsicles, run the molds briefly under warm water until the pops slide out easily. Arrange on a parchment-lined baking sheet, or wrap the popsicles individually in parchment or waxed paper and store in a zip-top bag to prevent frost.

Notes

  • Use ripe, juicy peaches for the best flavor and sweetness.
  • Popsicles with alcohol freeze a little softer than non-alcoholic, so enjoy straight from the freezer.
  • You can substitute nectarines or combine with other summer fruits for variety.
  • If you don’t have popsicle molds, use small paper cups and wooden sticks.
