Instructions
- Preheat and Prepare Butternut Squash: Preheat your oven to 400°F (200°C). Slice the butternut squash in half lengthwise, rub each half with a little olive oil, and season with salt and pepper. Place them cut side down on a baking tray.
- Roast Squash: Roast in the preheated oven for 40-45 minutes or until the flesh is tender and easily pierced with a fork.
- Sauté Vegetables: About 5 minutes before the squash is done, heat 2 tablespoons of olive oil in a large pan over medium heat. Add the diced onion and orange bell pepper and sauté for 5 minutes until the onion turns translucent.
- Add Spices and Garlic: Stir in the minced garlic, cumin, thyme, nutmeg, salt, and pepper. Cook for an additional 1-2 minutes until fragrant.
- Combine Butternut Squash and Broth: Scoop out the roasted squash flesh from the skin and transfer it to the pan with the sautéed vegetables. Add 2 cups of vegetable broth and use a spatula to break up the squash. Bring to a gentle simmer.
- Create Wells and Add Eggs: Using your spatula, make 6 small wells in the squash mixture. Crack one egg into each well carefully.
- Cook Eggs: Cover the pan with a lid and cook for 5-8 minutes, or until the eggs reach your desired doneness.
- Garnish and Serve: Remove from heat, garnish with fresh thyme, parsley, or microgreens, and serve immediately.
