Vegetables:
- 2 cloves garlic
- 1 yellow onion
- 2 carrots
- 8 oz. mushrooms
- 1 zucchini
- 1 red bell pepper
Other Ingredients:
- 2 Tbsp olive oil
- 1/2 lb. rotini (not cooked)
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 2 cups vegetable broth
- 24 oz. pasta sauce
- 4 oz. mozzarella, shredded (optional)
Instructions
- Mince the garlic, dice the onion, and slice the carrots. Add them to a large pot with olive oil. Sauté until onions are soft.
- Slice the mushrooms and add to pot; continue sautéing.
- Dice zucchini and bell pepper; add to pot with rotini, basil, oregano, and broth. Stir to combine.
- Bring to a boil, then simmer over medium-low for 10 minutes or until pasta is tender.
- Add pasta sauce, stir, top with cheese, cover, and heat until cheese melts.
- Serve hot and enjoy!
