  • 1 tbsp olive oil

Pasta and Sauce

  • 250 g / 8 oz fettuccine
  • 2 cups milk (any fat %)
  • 1 1/2 cups chicken stock/broth
  • 1 large garlic clove, minced
  • 1/2 cup thickened/heavy cream
  • 3/4 cup freshly grated parmesan cheese

Garnish

  • Parsley, finely chopped
  • Extra freshly grated parmesan, for serving


Instructions

  1. Prepare the chicken: Sprinkle both sides of the chicken breast with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 2 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet onto a plate and let it rest for 5 minutes. Slice the chicken while the pasta cooks.
  2. Simmer liquids and cook pasta: In the same skillet, add the milk, chicken broth, and minced garlic. Bring the mixture to a simmer over medium-high heat. Add the fettuccine pasta, submerging it in the liquid. Stir and move the pasta every 30 seconds to prevent sticking. Continue this for about 3 minutes until the pasta begins to soften.
  3. Continue cooking the pasta: Reduce the heat to medium. Stir the pasta every couple of minutes to prevent sticking and encourage even cooking. After 9 to 10 minutes, the pasta should be almost cooked but still have some liquid at the base of the skillet.
  4. Add cream and cheese: Stir in the heavy cream and freshly grated parmesan cheese. Mix thoroughly to combine.
  5. Thicken the sauce: Let the mixture simmer gently for about 2 minutes, stirring occasionally, until the sauce thickens and the pasta is fully cooked. If the sauce thickens too much and becomes gluggy, add a splash of hot water and toss to maintain a silky texture.
  6. Serve: Adjust seasoning with salt and pepper to taste. Serve immediately, garnished with additional freshly grated parmesan and chopped parsley.
