Main Cobbler Ingredients
-
- 1 stick salted butter, cubed
- 1 cup all-purpose flour
- 1 cup light or dark brown sugar, divided
- 2 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp kosher salt
- 1 cup milk
- 1 tbsp vanilla
- 5 1/2 peaches, cut into 8 wedges
- 2 tbsp maple syrup
Maple Butter
- 4 tbsp salted butter
- 1/4 cup maple syrup
Instructions
- Preheat the oven: Preheat your oven to 375° F. Place the cubed butter into a 9×13 inch baking dish and put the dish in the oven until the butter melts, approximately 10 minutes.
- Prepare the batter: In a mixing bowl, combine the flour, 3/4 cup of the brown sugar, baking powder, cinnamon, and salt. Add the milk and vanilla, then stir gently until just combined. Avoid overmixing.
- Prepare the peaches: In another bowl, toss the peach wedges with the remaining 1/4 cup of the brown sugar and the maple syrup until they are evenly coated.
- Layer the ingredients: Spread half of the peaches over the melted butter in the baking dish. Pour the prepared batter over the peaches. Do not stir. Then, arrange the remaining peaches on top of the batter.
- Bake the cobbler: Place the dish in the oven and bake for 50-55 minutes, or until the center is just set and the edges begin to brown.
- Make the maple butter: In a small pan, combine the butter and maple syrup. Bring the mixture to a boil for about 2 minutes, then remove it from the heat.
- Serve: Serve the cobbler warm or at room temperature, drizzled with the prepared maple butter and optionally topped with a scoop of ice cream.
