Spinach Cheese Mixture:
- 1 cup chopped spinach leaves
- 1/2 cup shredded mozzarella or cheese of choice
- 2 tablespoons crumbled feta cheese
- 2 tablespoons ricotta cheese or Greek yogurt
- 2 tablespoons sun-dried tomatoes, drained and chopped
- 1 tablespoon sliced black or Kalamata olives
Additional Ingredients:
- 4 slices whole grain bread or crusty bread of choice
- 2 tablespoons butter
Instructions
- Making the Spinach Cheese Mixture: Microwave spinach in a medium bowl for about 45 seconds until wilted. Add mozzarella, feta, ricotta, sun-dried tomatoes, and olives. Mix well.
- Assembling the Sandwiches: Spread the mixture onto two slices of bread and top with the remaining slices. Spread butter on top of each sandwich.
- Grilling: Heat a skillet over medium-low heat. Place sandwiches in the skillet, cooking until golden brown and cheese is melted, about 2 minutes per side. Slice and serve hot.
