Description

A hearty, comforting Meatloaf Sandwich Casserole combining the flavors of savoury meatloaf, BBQ sauce, crispy onions, melted cheese, and garlic bread layers for a delightful and easy-to-make dish.

    • 1 Pillsbury pizza crust
  • Sauces

    • 1 cup ketchup
    • 1 cup Sweet Baby Ray’s Hickory and Brown Sugar BBQ sauce (or your favourite BBQ sauce)
  • Meatloaf Mixture

    • 1.5 lbs extra lean ground beef
    • 20 Ritz crackers, crushed
    • 1 oz onion soup mix
    • 2 eggs
    • 1/2 cup ketchup and BBQ sauce mixture
  • Toppings

    • 1 cup crispy fried onions
    • 2 cups shredded mozzarella and cheddar cheese blend
    • 8 slices frozen Texas toast garlic bread, thawed

Instructions

  1. Preheat the oven: Preheat your oven to 350°F to prepare it for baking.
  2. Prepare the baking dish: Spray a 9 x 13 inch baking dish well with cooking spray, ensuring the casserole won’t stick to the pan.
  3. Layer the pizza crust: Unroll the raw pizza crust and spread it evenly at the bottom of the dish to create the base layer of the casserole.
  4. Mix the sauces: Combine the ketchup and BBQ sauce in a bowl by stirring well, then set it aside for later use.
  5. Prepare the meatloaf mixture: In a mixing bowl, add the ground beef, crushed Ritz crackers, onion soup mix, and eggs. Pour in 1/2 cup of the prepared ketchup and BBQ sauce mixture. Mix everything thoroughly, ensuring even distribution of the ingredients. (Using your hands may be easiest.)
  6. Spread the meatloaf layer: Spread the prepared meat mixture evenly over the pizza crust layer in the baking dish.
  7. Add the sauce: Pour the remaining ketchup and BBQ sauce mixture over the top of the meatloaf layer and spread it evenly with a spoon or spatula.
  8. Bake the casserole: Place the dish in the preheated oven and bake for 30 minutes.
  9. Add crispy onions and cheese: After 30 minutes, remove the dish from the oven and sprinkle the crispy fried onions evenly on top. Follow this by adding the shredded cheese on top of the onions.
  10. Add the garlic bread: Arrange the slices of garlic bread over the cheese layer.
  11. Finish baking: Return the baking dish to the oven and bake for an additional 20–25 minutes, or until the cheese is fully melted, the garlic bread is golden and toasted, and the internal temperature of the meatloaf layer reaches at least 165°F.
  12. Rest, slice, and serve: Let the casserole rest for a few minutes after removing it from the oven. Slice into portions, serve, and enjoy this delicious dish!
