Chicken:

- 2 tablespoons olive oil
Sauce:
- 1/3 cup chopped onion (white or yellow)
- 5 cloves garlic, finely chopped
- 4 oz oil-packed sun-dried tomatoes, chopped
- 1/2 cup dry white wine or chicken stock
- 1 cup heavy cream
- 1/2 cup shredded Parmesan, room temperature
- 1/2 cup chicken stock, or more if needed
- Fresh basil, for garnish
Instructions
- Prepare the Chicken: Season the chicken with salt and pepper, then coat in flour. Sear in olive oil until browned and cooked through. Transfer to a plate.
- Make the Sauce: In the same skillet, cook onion, garlic, and sun-dried tomatoes. Deglaze with white wine, then add cream. Stir in Parmesan until melted. Thin with chicken stock if needed. Season with salt and pepper.
