- 2 1/2 pounds medium carrots (scrubbed and trimmed)

- 1/4 cup maple syrup
- 2 tablespoons parsley (minced)
Instructions
- Preheat Oven: Preheat your oven to 425°F and position the rack in the middle level for even roasting.
- Prepare Carrots: Trim the top ends of the carrots. Cut thicker carrots into thinner strips while leaving thinner carrots whole to ensure even cooking.
- Arrange Carrots: Line a baking sheet with foil and spread the carrots evenly over it. Scatter the cubed butter around the carrots.
- Season and Add Maple Syrup: Drizzle the carrots with maple syrup, then sprinkle with kosher salt and black pepper to enhance their natural sweetness.
- Roast and Baste: Roast the carrots for about 45 minutes until tender. Every 10 to 15 minutes, stir and baste them with the melted butter and maple syrup mixture to evenly coat and caramelize.
- Optional Broil: For deeper color and slight caramelization, broil the carrots for the last 60 to 90 seconds. Watch carefully to avoid burning.
