Sweet Potatoes

  • 8 cups sweet potatoes, peeled and cut into large chunks (about 4 large sweet potatoes or 6 to 7 medium sweet potatoes)
  • Water (enough to cover potatoes for boiling)

Creamy Additions

  • 1/2 cup milk (almond or cow’s milk)
  • Pinch of salt

Flavorings

  • 3/4 tsp cinnamon
  • 6 tbsp maple syrup (add more to taste)

Instructions

  1. Boil the Sweet Potatoes
    Peel the sweet potatoes and cut them into large chunks. Place the chunks into a pot, then add enough water to cover the potatoes completely. Bring the water to a boil and cook the sweet potatoes until they are tender, approximately 10–15 minutes. Test their softness by piercing with a fork—they should be very soft for the creamiest result.
  2. Drain and Blend
    Once the sweet potatoes are fully tender, remove the pot from the heat and carefully drain the water. Add the milk to the pot and use a hand mixer to blend the sweet potatoes until smooth and creamy. If the consistency seems too thick, gradually add more milk, a little at a time.
  3. Add Flavorings
    Stir in the cinnamon and maple syrup. Taste the mixture and, if desired, adjust the sweetness by adding additional maple syrup.
  4. Serve and Enjoy
    Transfer the mashed sweet potatoes to a serving dish and garnish, if desired, with a sprinkle of cinnamon or a drizzle of maple syrup. Serve warm and enjoy as a perfect side to your main course.
