Pasta:
- 1 lb short-cut pasta
Chicken:
- 4 tbsp extra virgin olive oil
- 1 lb chicken tenders, cut into bite-size pieces
- 1 tablespoon Cajun seasoning
- Kosher salt and black pepper
Veggies:
- 1 medium yellow onion, chopped
- 2 bell peppers, chopped
- 3 cloves garlic, finely chopped or grated
- Crushed red pepper flakes
Sauce:
- 1 cup low-sodium chicken broth
- 1 cup milk
- 2 oz cream cheese, at room temperature
- 1/2 cup grated parmesan cheese
- 2 tbsp chopped fresh basil
Instructions
- Cook Pasta: Bring a large pot of salted water to a boil. Cook the pasta al dente, according to package directions. Drain.
- Cook Chicken: In the same pot over medium-high heat, cook chicken with onion and Cajun seasoning until browned. Set chicken aside.
- Prepare Veggies and Sauce: In the same pot, cook bell peppers and garlic. Add Cajun seasoning, red pepper flakes, salt, and pepper. Pour in broth and milk. Add cream cheese and simmer until slightly thickened.
- Combine and Serve: Stir in parmesan, pasta, and chicken. Cook briefly, then remove from heat. Stir in basil and serve topped with additional basil.
