- 3 large eggs, room temperature
- 1/4 cup Swerve Brown
- 1/4 cup Swerve Granular
- 1/4 cup almond milk, room temperature
- 1/4 cup butter, melted but not hot
- 1 tsp maple extract
- 1 cup almond flour
- 1/4 cup coconut flour
- 2 tsp baking powder
- 1/4 tsp salt
Maple Glaze
- 1/3 cup powdered Swerve Sweetener
- 2 tbsp heavy whipping cream
- 1 tsp maple extract
- Water to thin
- 4 pieces bacon, diced and cooked until crisp
Instructions
- Preheat and prepare pan: Preheat the oven to 325°F (163°C) and grease a donut pan well. If your donut pan only holds 6 donuts, be prepared to bake in batches.
- Blend wet ingredients: In a high powered blender or food processor, combine the eggs, Swerve Brown, Swerve Granular, almond milk, melted butter, and maple extract. Blend until the mixture is smooth and uniform.
- Mix dry ingredients: Add the almond flour, coconut flour, baking powder, and salt to the blender. Blend again until the batter is well combined and smooth without lumps.
- Fill donut pan: Spoon the batter into the prepared donut pan wells, filling each about 3/4 full to allow room for rising during baking.
- Bake donuts: Bake in the preheated oven for 15 to 20 minutes, or until the donuts are golden brown on the edges and firm to the touch.
- Cool donuts: Remove the donuts from the oven and allow them to cool in the pan for 10 to 20 minutes. Then, carefully flip the donuts out onto a wire rack to cool completely.
- Prepare maple glaze: In a medium bowl, whisk together the powdered Swerve sweetener, heavy whipping cream, and maple extract. Add water one teaspoon at a time until the glaze reaches a dippable consistency.
- Glaze and garnish: Dip each cooled donut into the maple glaze and place it back on the wire rack. Sprinkle the diced, cooked bacon evenly over the glazed donuts.
- Set glaze: Let the glazed and garnished donuts sit for about 30 minutes to allow the glaze to set before serving.
