  • 2 tbsp olive oil, avocado oil, or bacon grease
  • 5 cups beef broth (preferably bone broth)
  • 1 large bay leaf

Instructions

  1. Prepare the Ingredients: Cube the beef chuck roast into 1-inch pieces. Peel and chop the celery root into 3/4 inch cubes. Quarter the mushrooms and prepare pearl onions by trimming and peeling them. Slice the celery ribs, carrots, and garlic.
  2. Sear the Beef: Heat 2 tablespoons of olive oil, avocado oil, or bacon grease in a heavy-bottomed pot or Dutch oven over medium-high heat. Add the beef cubes in batches if necessary to avoid overcrowding, and brown them on all sides until a rich crust forms. Remove the beef and set aside.
  3. Sauté Aromatics and Vegetables: In the same pot, add garlic, pearl onions, celery, carrots, mushrooms, and celery root. Cook for a few minutes until they start to soften and the garlic is fragrant. Stir in 2 tablespoons tomato paste and cook for another minute to deepen the flavor.
