- 2 pounds chicken breast, skinless and boneless, cut into bite-size pieces
- 1/4 cup low-sodium soy sauce
- 1 teaspoon dark soy sauce
- 2 tablespoons honey
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 3 tablespoons rice vinegar
- 1/4 teaspoon red pepper flakes
- 1 tablespoon tomato paste
- 2 tablespoons hoisin sauce
- 1 tablespoon cornstarch
- 1 tablespoon water

Instructions
- Saute Chicken: Turn Instant Pot to saute setting. Add chicken and remaining sauce ingredients, except cornstarch and water. Stir well.
- Cook: Close lid, set to Poultry setting, and timer to 5 mins. Natural release for 10 mins.
- Thicken Sauce: In a bowl, mix cornstarch and water. Pour over sauce, cook until thickened.
- Finish: Remove chicken, saute sauce, return chicken. Garnish with sesame seeds and green onions. Serve over rice.
