Instructions

  1. Sear the Chicken: Heat a sauté pan over medium heat. Add 1 tablespoon of olive oil. Once hot, place chicken thighs skin side down and sauté for 3 minutes until browned. Flip and cook for an additional minute, then remove chicken and set aside.
  2. Sauté Vegetables in Instant Pot: Plug in the Instant Pot and press the sauté button. When heated, add remaining 1 tablespoon of olive oil, then add chopped onion and red and green bell peppers. Sauté for 3 minutes until softened.
