Description

Huli Huli Chicken is a tropical Hawaiian dish featuring tender chicken thighs marinated in a sweet and savory sauce, then grilled to perfection. This recipe captures the essence of Hawaiian flavors with a blend of pineapple juice, ginger, garlic, soy sauce, and other aromatic ingredients.

Chicken:

  • 1.5 kg / 3 lb chicken thighs (or breast)
  • 1 tbsp vegetable oil

Marinade:

  • 3/4 cup pineapple juice, canned or bottled (unsweetened)
  • 1 1/2 tbsp ginger, freshly grated
  • 1 1/2 tbsp garlic, freshly grated
  • 1/2 cup tomato ketchup (or Aussie tomato sauce)
  • 1/2 cup soy sauce
  • 1/4 cup sherry or Chinese cooking wine
  • 1/4 cup brown sugar
  • 1 tbsp Sriracha
  • 2 tbsp rice vinegar (or cider vinegar)
  • 1 tbsp toasted sesame oil

Garnishes, optional:

  • Sliced green onion
  • Pineapple slices, grilled for 3 minutes on each side for lines

Instructions

  1. Marinade: Mix marinade ingredients, set aside 3/4 cup for basting. Pour the rest over the chicken in a glass or ceramic container, coat chicken thoroughly, and marinate for 24-48 hours.
  2. Cooking: Preheat BBQ grills or skillet over medium-high heat. Cook chicken for about 10 minutes, flipping and basting with reserved marinade regularly until fully cooked.
  3. Transfer chicken to a plate, cover with foil, and let it rest for 3 minutes. Garnish with green onion and grilled pineapple slices.

Notes

  • For the best results, use boneless chicken thighs for optimal caramelization.
  • Use canned or bottled pineapple juice to avoid over-tenderizing the chicken.
  • Grate fresh ginger and garlic for a special flavor, and use sherry or Chinese cooking wine for an extra depth of taste.
