Chicken:
- 1.5 kg / 3 lb chicken thighs (or breast)
- 1 tbsp vegetable oil
Marinade:
- 3/4 cup pineapple juice, canned or bottled (unsweetened)
- 1 1/2 tbsp ginger, freshly grated
- 1 1/2 tbsp garlic, freshly grated
- 1/2 cup tomato ketchup (or Aussie tomato sauce)
- 1/2 cup soy sauce
- 1/4 cup sherry or Chinese cooking wine
- 1/4 cup brown sugar
- 1 tbsp Sriracha
- 2 tbsp rice vinegar (or cider vinegar)
- 1 tbsp toasted sesame oil
Garnishes, optional:
- Sliced green onion
- Pineapple slices, grilled for 3 minutes on each side for lines
Instructions
- Marinade: Mix marinade ingredients, set aside 3/4 cup for basting. Pour the rest over the chicken in a glass or ceramic container, coat chicken thoroughly, and marinate for 24-48 hours.
- Cooking: Preheat BBQ grills or skillet over medium-high heat. Cook chicken for about 10 minutes, flipping and basting with reserved marinade regularly until fully cooked.
- Transfer chicken to a plate, cover with foil, and let it rest for 3 minutes. Garnish with green onion and grilled pineapple slices.
Notes
- For the best results, use boneless chicken thighs for optimal caramelization.
- Use canned or bottled pineapple juice to avoid over-tenderizing the chicken.
- Grate fresh ginger and garlic for a special flavor, and use sherry or Chinese cooking wine for an extra depth of taste.
- Adjust sugar if using sweetened pineapple juice, and consider using pineapple pieces for a side of pineapple fried rice.
