Description

These Hot Honey Halloumi Flatbreads are a delicious and easy-to-make meal that combines the savory saltiness of halloumi cheese with the sweetness of hot honey, topped with a flavorful array of fresh ingredients.


Ingredients

For the Flatbreads:

  • 2 medium flatbreads

For the Halloumi:

  • 8 oz (225 g) block of halloumi cheese, sliced into 6 slices
  • 2-3 tbsp hot honey

For Toppings:

  • 1 handful rocket (arugula)
  • 2-3 tbsp cherry tomatoes, quartered
  • 1-2 tbsp pomegranate seeds
  • 1-2 tbsp finely diced red onion
  • 1-2 tbsp olives
  • 1/2 red or green chili, sliced
  • 2 tbsp cilantro (fresh coriander), parsley or a little bit of both, chopped

For Tahini Yogurt Sauce:

  • 4 tbsp Greek yogurt
  • 2 tbsp tahini
  • 1 tsp honey
  • 1/4 lemon, juiced
  • 2 pinches ground cumin

Instructions

  1. Prepare Toppings: Chop and prep all toppings and set them out on the table.
  2. Make Tahini Yogurt Sauce: Whisk together all sauce ingredients in a small bowl, adjusting consistency with warm water.
  3. Heat Flatbreads: Warm flatbreads in a hot pan for 30 seconds on each side. Spread sauce on top, then add arugula.
  4. Fry Halloumi: Fry halloumi slices in a pan with oil until golden, then drizzle hot honey over and caramelize.
  5. Assemble Flatbreads: Place halloumi on flatbreads, add toppings, more sauce, and a drizzle of hot honey. Serve hot.

Notes

  • Be cautious when frying the halloumi as it can quickly go from golden to burnt.
  • Adjust the amount of hot honey to your preferred level of spiciness and sweetness.
