- Coat the Chicken: Place the chicken thighs in a bowl and add the cornflour (cornstarch), salt, and pepper. Toss the chicken thoroughly until each piece is evenly coated with the mixture.
- Heat the Pan: Heat the vegetable oil in a large frying pan or skillet over high heat until hot but not smoking, preparing for searing the chicken.
- Cook the Chicken: Add the coated chicken thighs to the pan, cooking on one side without moving for about 4-5 minutes until they develop a golden brown crust. Flip the chicken and cook for another 2 minutes on the other side.
- Add Butter and Garlic: Add the unsalted butter to the pan and let it melt. Then stir in the minced garlic, reducing the heat to medium to prevent the garlic from burning, and allow the flavors to infuse.
- Prepare the Sauce: In a separate bowl, combine the honey, chicken stock, rice vinegar, and light soy sauce. Stir well to mix all the ingredients evenly.
- Simmer the Sauce with Chicken: Pour the prepared sauce into the pan with the chicken. Increase the heat to bring it to a boil, then reduce to a simmer. Allow the sauce to cook for 4-5 minutes, stirring occasionally, until it thickens and the chicken is cooked through with no pink remaining inside.
- Finish and Serve: Sprinkle the dish with finely chopped fresh parsley and chili flakes for a touch of freshness and heat. Serve immediately over boiled rice to enjoy a complete meal.
