For the Sauce:
- 1/2 cup honey
- 1/4 cup low sodium soy sauce
- 1 teaspoon fresh grated ginger
- 2 tablespoons minced garlic
- 1/4 teaspoon red pepper flakes
- 1 teaspoon cornstarch
For the Shrimp and Broccoli:
- 1 pound large shrimp, peeled, deveined, tails removed
- 2 tablespoons butter
- 2 cups chopped broccoli
- 1 teaspoon olive oil
- Salt & pepper to taste
Instructions
- Prepare the Sauce: In a small bowl, mix honey, soy sauce, ginger, garlic, red pepper flakes, and cornstarch.
- Marinate Shrimp: Coat shrimp with 1/3 of the sauce.
- Thicken Sauce: Whisk cornstarch into the reserved marinade.
- Cook Broccoli: Sauté broccoli in a hot skillet with olive oil, salt, and pepper until soft.
- Cook Shrimp: Cook shrimp in butter until pink on both sides.
- Simmer Sauce: Add reserved sauce, simmer until thickened.
- Combine: Toss in broccoli, heat through.
- Serve: Over rice or pasta.
Notes
- Marinate shrimp for 30 minutes for extra flavor.
- Jumbo 16/20 shrimp recommended, but any size will work.
- Shrimp tails can be left on for more flavor and presentation.
- Use fresh or thawed frozen broccoli, pat dry before cooking.
