  2. Roast the almonds: Preheat the oven to 350°F (180°C). Spread the almonds in a single layer on a plain cookie sheet and roast for 5-8 minutes. Remove immediately and transfer the almonds to a bowl to cool, avoiding leaving them on the hot sheet to prevent over-roasting.
  3. Melt the chocolate: Melt half of the chopped chocolate using a bain-marie or in the microwave, heating in 30-second intervals and stirring between each until completely smooth. Add the remaining chopped chocolate and stir until fully melted and glossy.
  4. Coat the almonds: Add the roasted almonds to the melted chocolate and stir well to coat each almond evenly. Using a fork, remove almonds one at a time, allowing excess chocolate to drip off.
