- 1 teaspoon dried oregano

- 1/4 teaspoon black pepper
- 1 teaspoon maple syrup (optional to balance acidity)
Instructions
- Saute the onion and garlic: In a large pot, heat the olive oil over medium heat. Add the diced onions with a pinch of salt and sauté for 3-4 minutes until translucent and soft. Add the minced garlic and cook for an additional 30-60 seconds until fragrant, being careful not to burn it.
- Cook the ground beef: Add the ground beef to the pot and season generously with salt. Cook, breaking up the meat with a spoon, until browned with no pink remaining. Stir in the tomato paste and cook for about 2 minutes to deepen the flavor and incorporate it into the meat.
- Add the remaining ingredients: Pour in the chili powder, garlic powder, cumin, dried oregano, paprika, cayenne pepper, black pepper, crushed tomatoes, diced tomatoes, kidney beans, navy beans, and chicken stock. Add the optional maple syrup if using. Stir thoroughly to combine all ingredients.
- Simmer: Partly cover the pot and reduce the heat to maintain a gentle simmer. Cook for 25 minutes, stirring occasionally to prevent sticking and to marry the flavors.
