These Halloween Slime Cupcakes combine moist chocolate cupcakes with a fun and spooky lime Jello slime topping, decorated with candy eyes to create festive edible monsters perfect for Halloween celebrations.
Ingredients
Scale
For the Cupcakes
- 1 box chocolate cake mix (any brand)
- 3 eggs
- 1/3 cup vegetable oil
- 1 cup water
- Chocolate frosting (enough for swirling on 18 cupcakes)
For the Slime Topping
- 2 boxes large lime Jello
- 2 1/2 cups boiling water
- Small candy eyes (36 pieces for 2 eyes per slime blob)
Instructions
- Prepare the Jello Slime: Combine the boiling water with both boxes of lime Jello, stirring continuously until the gelatin is completely dissolved. Pour the mixture evenly into small molds or a shallow container to set the slime shapes.
- Chill the Jello Slime: Place the molds in the refrigerator for 2-3 hours or until the Jello has fully set and become firm enough to hold its shape.
- Bake the Cupcakes: Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners. Mix the cake mix, eggs, oil, and water according to the package instructions until smooth. Fill each liner about two-thirds full with batter. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven and allow cupcakes to cool completely.
- Frost the Cupcakes: Using a frosting decorating bag, pipe a swirl of chocolate frosting on top of each cooled cupcake to create a smooth surface for the slime topping.
- Assemble the Slime Monsters: Gently remove the Jello slime pieces from their molds. Use a small amount of frosting as glue to attach two candy eyes onto each slime blob.
- Top the Cupcakes: Place one slime blob on top of each frosted cupcake, gently pressing into the frosting to secure it in place, creating spooky slime monster cupcakes perfect for Halloween festivities.
